Christmas Day. Another relaxing day with Uncle Bruce and his girlfriend April. We spent most of the day on the phone with family, but after that we cooked some dinner. Bruce and April are both outstanding cooks, and they made us incredible meals throughout our trip while also giving us plenty of cooking tips along the way. We expressed out gratitude by making them Christmas dinner. Travis roasted some veggies and made baked salmon with pecan. I worked on crab cakes and Lemon Cream Pasta which you see above. The pasta was simple. Parm, Cream, Lemon, Lemon zest, and parsley. It was a bit tart. I didn’t use measuring cups, because I fear it makes me look like an amateur. Lesson learned. Eyeballing recipe measurements should be left to the pros.
